Here's a slightly approximative, but quite tangible method: a counter that looks at all edits to all Wikimedia projects: < http://toolserver.org/~emijrp/wikimediacounter/ >.
That's all Wikimedia projects (not just Wikipedia), and you just see the current rate. While you can sample a given stretch of time by refreshing a given project's "Special:RecentChanges" page (e.g. < http://en.wikipedia.org/wiki/Special:RecentChanges >), I find it nicer to get average values.
If we look at the official stats (< http://stats.wikimedia.org/reportcard/ >), as of February 2010 Wikipedia was getting ~11.5 million edits per month across all languages. If we suppose that a month is 30 days long (perhaps not accurate for February!) we get just under 2.6 million seconds in a month. Thus we're looking at somewhere in the range of 4.4 edits per second across all languages. Around 4.0 million of those edits (per month) are in English, which gives English Wikipedia an average of 1.5 edits per second. This is an average: there will be times with multiple seconds between edits, and times with many edits per second.
Individual articles will get updated less frequently: very obscure articles might go months or even years between edits, while the most popular or controversial articles might see only hours or even minutes.

By looking at the most recent 500 changes, you can estimate how many times per minute the site is updated with another new edit. By my recent count, it looked like about 165 times per minute.
Of course, this just shows you how many people can be duped into doing something, frequently. Remember, over 400,000 people also went to see MacGruber this week.

wikipedia can be changes by everyone and there not hiring people anymore to fix everyones mistakes so really you cant rely on it
